I hope you all had a happy 4th of July and were able to celebrate in a fun way! 🇺🇸We spent the day with my parents at their community pool and later in the evening grilled some steaks, hot dogs, and veggies and of course had some ice cream!🤗
If you are ever in need of a quick, tasty, and healthy snack these no-bake oatmeal energy bites are for you! They are a good source of fiber, protein, and omega 3’s but they taste fabulous (they remind me of peanut butter oatmeal cookie dough!) and provide a boost of energy. I’ll usually have 1 or 2 when my late afternoon cravings kick in. They couldn’t be easier to make (only 5 ingredients!) and are a great on-the-go snack idea, even for kids!
- 1 3/4 cup rolled oats
- 3/4 cup peanut butter (can also use almond butter but may need to add extra honey if dough is too dry)
- 1/3 cup honey
- 1/4 cup mini chocolate chips
- 2 TBS chia seeds (can also use ground flaxseed)
1). Combine all ingredients in mixing bowl, stir well.
2). Roll into approximately 28 tablespoon sized balls.
3). Place on parchment lined cookie sheet and refrigerate for at least 30 minutes.
4). To store, place in airtight container or ziplock bag. Can refrigerate for up to 3 weeks or freeze for up to 6 months.
